Makes one 9-inch cake
1.5 cup almond flour
1 cup sugar
¾ cup butter, salted
1 cup flour
6 egg whites
2 tablespoons honey
In a large bowl combine the flour, almond and sugar.
In another bowl whip the egg whites until just lightly foamy and incorporate them into the flour mixture, then add the honey.
Melt the butter until light brown (hazelnut color), and let it cool; then add to the mix until well blended.
Grease a 9" ceramic or glass pie pan, and pour the Financier paste into the pan until about 3/4 full. Bake in a preheated oven set at 375 ° for 25 minutes until golden brown.
Note: You also could use individual mold such as small muffin, madeleine molds or others to bake the financière.
This cake is wonderful with fresh strawberries and/or tea service.
